If you need a bonfire night bake to pack up and take out to your local display, then you need to try Parkin! This spicy bake is typically eaten in Yorkshire and Lancashire, with both counties claiming ownership, but i’m not confident to come down on either side…
It’s sticky with golden syrup and treacle, yet substantial with the addition of oatmeal making it ideal for an energy fix when you’re shivering in a cold field waiting for the boom of the fireworks to kick in.
Bake a few days in advance of when you need it because it gets stickier and tastier as it matures. The recipe is over on Parentdish if you fancy giving it a go>>>
