Watermelon Prosecco Cocktails

Watermelon Prosecco Cocktails on feedingboys.co.uk
These pretty watermelon prosecco cocktails are the perfect refreshing party tipple for summer barbecues. The taste and colour of watermelon is an instant shortcut to feeling summery, even if the weather’s not behaving itself. They’re far too easy to knock back though so be warned they can be lethal!

I whizzed these up in my Optimum Froothie 9400 power blender for a girly night in and it felt tropical in my front room despite the lack lustre weather outside. The great thing about my blender is that within seconds any lumps or seeds are blitzed into a smooth and frothy liquid delight. In other words you’ll not be picking unsightly black seeds out of your teeth later.

When you’re entertaining guests, the last thing you want to be doing is faffing about with cocktail shakers and a myriad of ingredients. So i’ve created a cocktail perfect for pitchers that only requires four ingredients and a little advance preparation. If you chop up a watermelon next time you buy one and then bag it up in the freezer, you’ll always be mere moments away from a jug of this cocktail. Surely that’s worth a little effort?!

Watermelon Prosecco Cocktails

Makes: 1 large pitcher/jug with watermelon to spare for the next round!

Ingredients
1 x watermelon
200ml vodka
1 x bottle prosecco
Fresh mint

Instructions
1. A few hours before the party: chop and peel the watermelon into large chunks and pop into the freezer, along with your bottle of vodka which will go nice and gloopy if you store it in there.

2. When you’re ready to serve: put about a quarter of the watermelon chunks into a high powered blender along with the vodka and blitz until smooth. Top up with prosecco and then blend on a low setting to combine without it frothing up too much.

3. Fill a large jug with ice and then pour the lovely pink cocktail over and garnish with plenty of fresh mint leaves. Serve in jam jar glasses with straws.

Feeling minty?

If you’re fan of the mojito, you could substitute the vodka for white rum and blitz a small handful of fresh mint leaves in with the watermelon.

    How can you not love this, sounds so refreshing! I am actually working on a similar recipe for a watermelon mojito as I just love any drinks with watermelon. It’s just perfect for the summer months. I will try your version with prosecco, sounds delicious!
