If you need a cracking halloumi recipe to brighten up the Bank Holiday weekend then you’ve come to the right place. I’ve put together a tangy and fresh mango salsa which is perfect for dipping salty sticks of the Cypriot cheese into.
I’ve created this dish for Waitrose, who are celebrating the UK’s growing love of halloumi cheese.
This recipe is really versatile, so it could be a starter, party nibble or part of a larger BBQ spread. The mango salsa is really zesty thanks to the mint and lime, with just a little kick from the chilli. I adore mixing savoury and sweet so this really plays into that.
Halloumi is our favourite BBQ ingredient, it’s one of those things our family can never get enough of! Super salty and squeaky, it’s got a great firm texture that’s very satisfying for vegetarians. When Arlo got wind of me photographing this recipe, he hung around the table stubbornly until I let him take a wedge of his favourite cheese to munch on.
We served this dish up as part of a farewell feast for our good friends who are moving away from Whitley Bay this week. We’ve enjoyed many a boozy Sunday eating great food and chatting while the kids run riot, so it felt fitting to create something special to share.
Halloumi Dippers with Mango, Mint and Chilli Salsa
Serves 4-6 as a starter/snack
Prep time: 15 minutes
Cook time: 5 minutes
Ingredients
2 x blocks Waitrose Essential Halloumi
1 ripe mango
1 lime – zest and juice, plus an extra lime to serve
1 handful fresh mint leaves, plus extra to garnish
1 small red chilli
Method
1. Cut each block of halloumi into 6 thick slices and set aside ready to pan fry or BBQ.
2. Split the mango in half and remove the stone, then finely dice the fruit and pop into a bowl. Add the zest and juice of the lime and give it a mix. Then chop the mint leaves, deseed and finely chop the chilli and mix it all together.
3. When you’re ready to serve griddle the slices of halloumi cheese for a few minutes per side until they start to colour. Place on a chopping board and cut each slice in half so you get baton shaped dippers.
4. Arrange on a serving plate with wedges of lime, scatter with torn mint leaves and place a couple of little dipping dishes filled with the mango salsa. Put in the centre of the table and let everyone dive in!
