Summer dessert ideas

Making your own desserts can often get relegated when you’ve got people coming over for a BBQ, it’s often quicker just to pick something up from the supermarket. However this usually ends up being more expensive and not as delicious, so why not try three of my quick and easy summer dessert ideas that I developed for the Good Food Channel website instead?

These jolly fruit kebabs with creamy strawberry dip are colourful and inviting – especially for children. You can pick and mix the type of fruit you use according to the tastes of your guests, or just do single types of fruits on each skewer. If you wanted you could caramelise the fruit by quickly putting them on the BBQ for a few seconds each side.

I cannot emphasise enough how tasty the strawberry dip is… we were literally drinking it like a milkshake during the photoshoot!

Mini make-ahead desserts like these lemon and ginger cheesecakes are absolutely ideal for taking the stress out of entertaining. They’re very easy to knock up and look really pretty too. Food in jars continues to be a big food trend so a tray of these makes a great impact.

Mint choc chip ice cream

And finally, my favourite ice cream in the world, home made mint choc chip! The recipe is scandalously easy and definitely worth investing in a cheap ice cream maker. I’ve just got a £20 one that has a bowl you put in the freezer 24 hours before you need to use it, but it does a great job!
