Let’s celebrate the summer with some lush lollies (or popsicles if you’re stateside) bursting with tropical flavours to try and encourage some sunshine in time for the school holidays. I’ve combined thick and creamy coconut yogurt with fresh mango and zesty lime to create these punchy frozen treats. It’s a ridiculously simple recipe, but then we need to keep things simple when the kids are at home for six weeks *shudder*.
I used my Optimum Froothie 9400 power blender to blitz the ingredients together, as it always rustles up the smoothest of creamy textures. The boys love making their own smoothies, but I think now I have my new popsicle mould their next kitchen obsession will be coming up with lots of different creations.
Mango, Coconut and Lime Popsicles
Makes 8
Prep time: 10 mins
Freeze time: 4 hours
Ingredients
1 x pot Greek style Coconut Yogurt
1 mango
1 lime
Method
Put the yogurt in your blender. Chop the mango into chunks and chuck them in next. Zest the lime in and then squeeze the juice in to finish. Blitz until smooth. Pour in lolly moulds and freeze for a minimum of 4 hours. Turn out and enjoy!
