Easy Onion Gravy - great for vegetarians on Christmas Day! Find the recipe on feedingboys.co.uk
Whether your whole family is vegetarian or just one of you, when it comes to Christmas dinner you’ll be needing a decent gravy. This super easy onion gravy is perfect for pouring over nut roasts, Quorn fillets or veggie sausages. It’s also splendid with pork sausages and toad-in-the-hole.

Christmas dinner without gravy is unthinkable quite frankly and my version is far tastier than one of the instant dusty contents of a jar!

This tasty number is ready in under 30 minutes and you can make it well in advance and either chill or freeze until needed. It also makes your kitchen smell glorious and festive due to the mixed spice and red wine combo.

It’s been a glorious winter morning in my kitchen with the sun streaming through the window while I braise red cabbage in the slow cooker and make this gravy.

Easy Onion Gravy

Serves 4-6
Prep time: 10 mins
Cook time: 30 mins

Ingredients

2 tbsp olive oil
3 small onions
1 tsp sea salt flakes
1/2 tsp all spice
1 tbsp dark brown soft sugar
1 tsp garlic paste
1 tsp poricini mushroom paste
1 glass red wine
1 tbsp plain flour
500 ml vegetable stock

Method

  1. In a large lidded pan, gently head the oil then add the finely chopped onion with the sea salt and soften for 5-10 mins on a very low heat with the lid on, stirring occasionally.
  2. Add the all-spice, sugar, garlic and mushroom pastes, turn up the heat and stir in. Add the wine and stir and bubble until reduced.
  3. Add the flour and stir well until a combined forms a paste-like consistency, then gradually add the vegetable stock and stir well so there are no lumps. Turn the heat down and allow to simmer for 10 mins. Taste to check the seasoning and adjust accordingly. Serve immediately or allow to cool and then pour into a container and either chill or freeze until needed.

    This gravy sounds lush and uses 2 ingredients I have never used, garlic and mushroom paste! Mushroom paste is something I definitely want to check out:-)

      Thanks Camilla! The pastes have rapidly become essentials in adding depth of flavour to my cooking Camilla. They’re both in the specialist cooks ingredients section at Sainsbury’s.
