Milkshakes and pasta – Sam’s food heaven

Sam’s lack of adventure at the dinner table has driven me crazy these past few weeks.

But things have improved slightly on the back of his nursery doing a cookery theme this week.

So I capitalised on this and we’ve been making yummy home-made milk shakes in the afternoons.

Our favourite flavour had been banana with maple syrup, but today we added a ripe peach into the mix and the results were dreamy.

We chopped up the banana, peeled and destoned the peach threw it all in a jug with a splash of maple syrup. Then we poured over 500ml of milk and got the stick blender involved.

It’s very therapeutic blending it all up into a frothy cool summer drink. Sam has been lapping them up

The other success involved pasta (naturally!)

It was a mixture of quiet life cooking and using up leftovers:

Bacon, tomato and thyme pasta

(Serves 2 adults, 2 children)

Tbsp olive oil
1 carrot, grated
6 rashers smoked streaky bacon, chopped
1 red pepper chopped
1 x 400g tin chopped tomatoes
Handful of thyme – just leaves
Tbsp brown sugar
Tbsp Umami paste
350g penne pasta
Grated cheese to serve

Heat the olive oil and gently fry the carrot for a few minutes until soft.

Add the bacon and fry until cooked nicely with a bit of colour.

Add the pepper and umami paste and cook for a few minutes.

Add the tomatoes, thyme and sugar and cover and simmer for 15-20 mins

Cook the pasta according to pack instructions, drain and divide out onto four plates – dollop some sauce on top or mix it together with the pasta – whatever works for you!!

Scatter with grated cheese of your choice and some black pepper for the grown ups!

Tips:

I use grated carrot instead of onion coz Sam hates it and can detect it no matter how finely I chop it!!!!

You can add a nice big dollop of Philadelphia at the end to make the sauce nice and creamy too.

So a resounding thumbs up from Sammy B there – wish he reacted to all my cooking like this…
