A Slimming World Friendly one pot family meal of juicy chicken thighs roasted with butternut squash, baby new potatoes and peppers with a sweet chilli, lime, garlic and lemongrass glaze
Pre-heat the oven to gas 7, 220C, 200C fan. Pop the chicken thighs, potatoes, butternut squash and red pepper into a bowl. Season with salt and pepper and then add the remaining ingredients and toss together until coated.
Turn out into a large roasting dish and give it all a good spray with frylight. Bake in the oven for around 50 minutes until the chicken is golden and the vegetables are cooked through.
Serve with lashings of green salad.
