A Slimming World friendly and syn free quiche with bags of flavour

Ingredients
  • fry light spray
  • 3 eggs
  • 150 g fat free cottage cheese
  • 1 tbsp fresh dill chopped
  • 60 g honey roast salmon flakes
  • 1 small courgette cut into thin strips with a spiraliser
Instructions
  1. Pre-heat the oven to 200C/180C fan/gas 6 and spray an 18cm round baking dish with fry light.

  2. Put the eggs and cottage cheese in a bowl and whisk together with the dill and some salt and freshly ground black pepper.

  3. Scatter the salmon flakes and strands of courgette in the bottom of the dish and then pour the egg mixture over the top. Bake in the oven for 20 minutes until golden.

  4. Cut in half and serve with heaps of salad. The whole thing is syn free so you could eat it all if you're famished!
