Sometimes all you feel like is a nice comforting piece of toast for lunch or a little evening snackette, but what to top it with? I’ve come up with nine tasty toast toppings to give you some inspiration next time you get the munchies. From creamy garlic mushrooms to cinnamon cream cheese with blueberries, whether you’ve only got five minutes or 10, all of these can be whipped up in a flash using mainly store cupboard ingredients and fridge/freezer staples.
1. Parma Ham & Rarebit
Instructions: Pop about 60g of grated strong cheddar cheese into a small saucepan with a teaspoon each of butter, Worcester sauce, dijon mustard, flour along with a tablespoon of milk and stir over a gentle heat until melted. Pour it over a piece of toast and then flash under the grill until bubbling and golden at the edges. Top with a sliver of Parma ham and a good grinding of black pepper.
2. Soft Goats Cheese, Roasted Nuts, Honey and Salad Leaves
Instructions: Spread a piece of toast with lashings of soft goats cheese, scatter with roasted nuts and salad leaves and then drizzle with honey – so quick, so amazing!
3. White Bean and Tahini Smash
Instructions: In a blender (I use my fab Froothie Optimum G2.3) whizz up a drained in of cannelini beans with the zest and juice of a lemon, 2 garlic cloves, a tablespoon of tahini, a good glug of extra virgin olive oil and a generous pinch of sea salt. Once it’s super smooth spread it on toast and scatter with chopped flat leaf parsley.
4. Creamy Mushrooms with garlic and thyme
Instructions: This takes a little more effort, but only because you have to do a small amount of cooking. Simply halve a couple of small handfuls of chestnut mushrooms, melt a knob of butter in a frying pan and chuck the mushrooms in with a teaspoon of crushed garlic and the zest of half a lemon and stir fry until the mushrooms start to soften. Turn down the heat at add in a couple of tablespoons of creme fraiche, season with plenty of salt and pepper and then pour it over a piece of toast, scattering with some picked thyme leaves. Incredible!
5. Cinnamon cream cheese with blueberries & maple syrup
Instructions: This would make a lovely weekend breakfast with a big pot of coffee on the side. Simply mix up 3 teaspoons of cream cheese with a teaspoon of muscovado sugar and half a teaspoon of ground cinnamon then spread it onto the toast. Scatter with blueberries (I love using frozen ones but not everyone enjoys biting on frozen things like I do) and then drizzle with maple syrup. Divine.
6. Cream cheese, ham & Cucumber ribbons
Instructions: Perfect for the kids for a post school snack or a quick and easy lunch – it’s amazing how slicing something differently can make the fussy little herberts more likely to eat something. Spread the toast with plenty of cream cheese and create ribbons of cucumber using a vegetable peeler and slice thin strips of honey roast ham and then fashion them on top of the toast to look all lovely. Will the kids eat it? Who knows, but I’m sure you’ll enjoy scoffing the leftovers if they don’t!
7. Fish Fingers on creamy crushed peas
Instructions: This is really a deconstructed posh version of a fish finger sandwich… but it’s super easy to make and looks far prettier. Grill up some fish fingers and boil some peas. Drain the peas and crush with a potato masher with some lemon zest, torn basil and a little creme fraiche. Pile on to a piece of toast, top with fish fingers and some more torn basil. Ta-Dah!
8. Peanut butter, apple & honey
Instructions: Lightning quick fix… spread peanut butter on toast and top with thinly sliced apple then drizzle with clear honey. This is a wonderful after school snack for kids and I often turn to this when I’ve got back from walking the dogs.
9. Pizza Toasts
Instructions: An absolute classic shortcut to instant pizza! Simply spread a half toasted slice of bread with tomato pesto/pizza sauce/ketchup whatever you have knocking around and then scatter with grated mozzarella cheese (or again whatever cheese you’ve got in) then top with your favourite morsels… whether it be salami and sweetcorn, ham and pineapple or roasted vegetables – the whole family will want a pizza the action!

I love every single one of these! Some are similar to what we do but I haven’t really tried the sweet route and loving the cream cheese with blueberries idea!
