A delicious and quick healthy recipe that’s big on flavour and colour, these Avocado, Mozzarella, Tomato and Red Onion Flatbreads are a fantastic lunch idea.
The filling takes about 10 minutes to prepare using a mixture of fresh and store cupboard ingredients. The dressing is a simple jam-jar mix-up of balsamic vinegar, lemon juice, olive oil and some soft dark brown sugar, resulting in that addictive sweet/salty hit that I can’t get enough of.
Instead of using raw red onion, which I find a bit harsh in salads, I’ve used Baxters pickled red onion from their new Deli Toppers range.
It’s such a convenient way to get a hit of red onion flavour without having to fanny about peeling and slicing onions. I reckon they’d also work a treat in sausage sandwiches, goats cheese tarts or even to liven up a humble cheese omelette.
For these Flatbreads I chopped them up and tossed them in with the fresh avocado, cherry plum tomatoes and mozzarella pearls with some torn basil leaves. As getting well into the autumn now, I think this filling would also work nicely over a baked sweet potato when you get in from work.

Avocado, Mozzarella, Tomato and Red Onion Wraps
Prep time: 10 mins
Serves: 2-4
Ingredients
For the dressing
1 lemon, juice only
2 tsp soft dark brown sugar
2 tbsp balsamic vinegar
4 tbsp extra virgin olive oil
salt and pepper
For the filling
1/3 jar Baxters Red Onion
1 avocado
12 cherry plum tomatoes
125g mozzarella pearls
handful fresh basil leaves, roughly chopped
salt and pepper
To serve
4 flatbreads
salad leaves
Method
- Put all of the ingredients for the dressing in jam jar, season and secure with a lid before giving it a really good shake. Check the balance of flavours and adjust to your own taste.
- Lift out a third of the red onion rings from the jar, drain and chop. Halve the avocado, remove the stone, scoop out the flesh and roughly chop. Halve the tomatoes and mozzarella pearls and combine everything in a bowl, along with basil leaves and some seasoning.
- Put the bowl in the middle of the table with the wraps, salad and dressing and get everyone to build their lunch!
