Sweet Potato, Chickpea, Lime and Coriander Burgers with Crunchy Slaw

sweet potato, chickpea, coriander and lime burgers with crunchy slaw by Katie Bryson for Channel 4

Sweet potato flesh is brilliant for making veggie burger patties, and this spin is bulked up with chickpeas then hit with chilli, garlic, coriander and lime to turn up the flavour. The crispy polenta crumb holds things in place and you just lightly pan fry to golden perfection.

These are NOT burgers you want to be flinging around on the BBQ grill, as they’ll just flop through onto the coals. These are more of a tea time treat, delicious wedged into a brioche bun with my crunchy slaw and a dollop of sour cream. Or if you’re going easy on the carbs roll the mixture into smaller balls, pan fry and then serve up with salad and slaw.

Matthew turned vegetarian four years ago now, and I have to say it’s really transformed what we eat as a family. I’m far more likely to try out recipes like this and experiment with new ways of approaching the food we used to eat. The boys and I still eat meat, but a lot less and it feels like a luxury. I’m still very reliant on the Quorn product range for quick family meal options which are “shove-in-the-oven” friendly, but recipes like these burgers are what i’d rather be developing when I have the luxury of time on my side.

    Veggie Burgers with sweet potato and lime sound like a winner to me so must try these. I recently made Black Bean Veggie Burgers and the whole family much prefer them to beef now. In fact they were so good we had them 2 nights in a row:-)

    These knock spots off of my sweet potato burgers: I love everything about these! You might think this is an odd thing to write but I am relieved that you can’t pop these on a grill as then I would have thought your were a sorceress. An impossible thing: homemade veggie burgers really don’t grill up, do they? Oh, and thanks for linking up to my recipe. 😉

    Wow, these look good! I’d probably leave out the coriander as I really can’t abide the taste of the stuff, but I’m keen to give them a try. I’ll omit posting any photos on social media as my attempts will be inferior to yours 🙂
