Jerk Spiced Chicken Thighs With Cornbread

June 12, 2015 by Katie Bryson

Jerk Spiced Chicken Thighs With Cornbread by Katie Bryson for Channel 4

These budget-friendly spiced and juicy chicken thighs will help turn up the heat if you’re feeling a bit chilly while braving British BBQ season. The jalapeño corn bread is a ridiculously faff-free side that makes a tasty change from the usual array of bread hastily grabbed from the supermarket when the sun has made an appearance.

We’ve not done a whole lot of barbecuing up here in Whitley Bay yet this “summer”, but when we have sparked up the grill we’ve had to close the lid to stop the gas flames going out because of the fierce wind that blows here! We’ve also not got around to getting much in the way of garden furniture yet, but to be honest even when it looks warm outside I get a chill  after about 5 minutes so it’s safer to eat in the kitchen.

I’m sure i’ll toughen up eventually!

So if you fancy serving up this feast for your next grilling adventure, go and check out the Channel 4 Fairy Giving Your More website for my easy barbecue recipe and instructions: Jerk Spiced Chicken Thighs With Cornbread

As i’ve used thrifty ingredients for this easy barbecue recipe, i’m entering it into Camilla and Helen’s Credit Crunch Munch event, this month hosted by Jen’s Food. If like me you’re really watching the pennies at the moment, hop on over there for some fantastic ideas for making your food go further.

I’ll admit I’ve never really got into cornbread, but yours looks lovely! Love the idea of adding jalapenos.

It’s one of those things that gets forgotten – it’s ridiculously easy to make though so i’m going to try and make it far more often now 🙂

I’m loving the sound of this! I’m a big fan of cornbread too! We’ve not done any BBQ-ing yet this year. I’m beginning to fear we will not be getting a summer this year!

Beautiful little book the audience were all given Beautiful little book the audience were all given at last night’s performance of #Here from @curious.monkey_ at @northern_stage. Such a powerful performance from the talented cast bringing together individual stories of what it means to seek sanctuary in the North East, the friendships that are forged and the spark of hope that refuses to be snuffed out. With the plight of refugees so visible right now, the timing of this performance was impeccable. #RefugeesWelcome #togetherwithrefugees🧡 #StoryCollectors
