I’ve got a trio of treats for Easter weekend including sumptuous chocolate brownies, easy but pretty cupcakes and a foolproof recipe for roast lamb. These are my recipes for Channel 4 Fairy Giving You More for April, so I hope you enjoy making them as much as I did coming up with them.

Easter Nest Cupcakes by Katie Bryson for Channel 4 Fairy Giving You More

Easter Nest Cupcakes

These make a good baking project for you and the kids over the holidays – very easy and very pretty. A simple chocolate sponge topped with vanilla frosting, a scattering of chopped chocolate finished with a clutch of eggs.

If you can resist eating these gooey goodies yourself, package up some of these brownies in pretty Easter themed tins to give as gifts to make a change from eggs, or to have on hand to serve up to the kids after a day running around during the school holidays.

Slow Roast Lamb Shoulder by Katie Bryson for Channel 4 Fairy Giving You More

Slow Roasted Lamb Shoulder with Garlic and Rosemary

Are you cooking Easter Sunday lunch for friends and family this weekend? Well here’s my simple and tasty recipe for Spring lamb. Shoulder is a cheaper cut so great if you’re watching the budget. The longer cooking time and plethora of aromatics make for a delicious centre piece to your Easter feast.

Pixie and Pickle on Whitley Bay Beach

Apologies again for the blog being so quiet… we moved into our new house two weeks ago and i’ve been madly unpacking, doing all the associated admin and trying to keep the boys on an even keel. We have no functioning washing machine or internet connection beyond me turning my phone into a wifi hotspot. Thank goodness for my daily dog walk on the beach… it’s keeping me sane!

Wishing you all a very Happy Easter – I hope you have a lush long weekend!

Katie x

Those cakes look delicious. I feel hungry just looking at them. These might be my afternoon project with my two little girls. Lucy x

Thanks so much Elizabeth… we’re mostly unpacked now, apart from a crazy amount of boxes in the garage which I suspect might remain unpacked for a while!

Nothing beats roast lamb at Easter 🙂 Daily walks on the beach sound like great fun, hope you’re all feeling more settled soon.

Thanks Jen, we’re feeling more settled every day, although sometimes I have to pinch myself that this is all real!

Of course the recipes are fab – but love the pic of your dogs on the beach. Terrier fan (mine not allowed on our beach though).
