Banoffee Pancakes by Katie Bryson for Channel 4/Fairy Giving You More

On Pancake Day you need to arm yourself with a good basic pancake recipe, a decent non-stick frying pan and a whole lot of toppings.

We eat pancakes pretty regularly in the Feeding Boys house, they’re the undisputed champion of our  weekend breakfasts. The only thing to decide is whether to opt for thick and fluffy American style pancakes or thin and crispy crepes.

This Shrove Tuesday we’re going for crepes and we’re pushing the boat way, way out there with a very indulgent banoffee topping.

It’s actually super simple to make, get your kids to bash up the biscuits while you griddle the bananas and then bring everything to the table so everyone can construct their own.

If you’re a very organised person you can get the pancakes ready ahead of time and layer them up in between sheets of greaseproof paper and simply warm them up in the oven. I can hand on heart say I don’t think I’ve ever managed to achieve this level of organisation, but it’s an ambition 😉

This is my last blog post before we move to the North East, so I apologise in advance if posts become a little sporadic. Multiple trips to the dump and charity shop, packing, admin, final goodbyes and a very long drive lie ahead this week. Leaving London will be an emotional wrench after 17 years, but new adventures are waiting for us which I hope to share with you here in the coming months.
