First of all – Happy New Year everyone! I’m SO sorry it’s taken me so long to post my first recipe of 2015. Feeding Boys still looks like it’s Christmas, when all everyone wants to do is cut back on the calories… ooooops!
Well there is a good explanation for this. We’re in the middle of relocating from London to the North East – yes huge changes and adventures ahead for me and the family. We’re swapping busy urban life for a more chilled out existence by the sea. It’s where my husband grew up and has always had a special place in my heart too. Northumberland is such a stunning and unspoilt region.
This will be one of the many beaches i’ll be walking Pixie and Pickle on very soon…
So it’s been all systems go getting our house on the market, looking for a new place up north and finding school places for the kids. It’s hard to concentrate on anything, but i’ve had recipe work on the go in the background so I thought i’d take a breather and share a recipe with you that’s perfect for January.
Sweet Potato and Chickpea Tagine
This vegetarian tagine makes for a warming and satisfying supper and is packed with good stuff and a ridiculous amount of flavour. My obsession with sweet potato continues and i’ve paired it with chunky chickpeas for maximum tummy filling power. The subtle and fruity Moroccan flavours make it an uplifting meal that’ll make your January a little more joyous (hopefully!).
Make a batch and freeze in portions for those nights when you’re too busy to cook or to take to work to heat up for a filling lunch. I made mine in the slow cooker which worked brilliantly.
Looks absolutely delicious Katie. Fantastic news about your move too – what a fabulous place to bring up your family:-)
Thanks Camilla – yep we’re pretty darned excited!!!!
Congrats on the move! How exciting! I have always wanted to go to Northumberland, as the coast look beautiful.
Thanks Dannii – the beaches are breathtaking, it really is worth a visit!
That is such exciting news Katie, I imagine you have very little spare tome at the moment but I look forward to sharing a few farewell drinks with you before you go! Love the sound of this tagine too.
Farewell drinks sounds like a great plan Laura… I’ll miss London, but new adventures are good for the soul, as is my veggie tagine 😉
Congratulations on the house move! Exciting times! I might be a bit biased, but I think it’s much better to live by the sea. 🙂 You’ll love it! Lovely looking recipe too!
Thanks Elizabeth… I’ve always craved a life by the sea!
So exciting! I do admire you making such a big decision like that, we’re terrible ditherers about that kind of thing!
Happy New Year to you too… this looks so moreish and thick and warming. Heavenly!… love the beach photo!
Lovely warming soup. Good luck with the move xx
Good luck with the move. My sister lived in the North East for a couple of years so I visited a previously uncharted bit of the UK. LOVE those amazing beaches and the really remote countryside. Anyone for a Craster Kipper? Actually would rather have your beautiful tagine.
I love a good tagine – this looks really tempting and, as usual, the styling is gorgeous. How exciting about the move 🙂
Thanks Emily!!!!
Best of luck with your move, sounds so lovely and exciting. That tagging also looks lovely- flavoursome and comforting x
I’m gonna dream about this place until the next time I come back to England ! … and to dream about a plate of your tajine : )
That’s very sweet Sylvie – thanks!
