Chicken, Sweetcorn and Broccoli Pot Pies

October 3, 2014 by Katie Bryson 16 Comments

Chicken, Sweetcorn and Broccoli Pot Pies by Katie Bryson for Parentdish.co.uk
A great way to use up leftover roast chicken, these ultra tasty pot pies have a creamy filling and crisp criss cross pastry crust.

I know it’s not got cold yet, but i’m still in the mood for autumnal comfort eating. So with this in mind i’ve been experimenting in my kitchen, coming up with seasonal recipe ideas for Parentdish.

These little pies are a cinch to make, with the lattice pastry crust making them a touch more spesh. If this seems like too much of a faff, you can totally by-pass it by putting a solid piece of pastry on the top, or even a layer of mash.

Serve to your hungry troop with plenty of steamed greens on the side.

I’m going to add this recipe to October’s round of Credit Crunch Munch, hosted this month by A New Addition on behalf of Fuss Free Flavours & Fab Food 4 All. These pies are a great way to use up leftovers, and I picked up the roll of puff pastry on offer for a £1 at the supermarket, so all in all were pretty frugal.

I know what you mean about wanting autumnal food even though the weather is still so warm. I love the lattice on top of these pies, so easy to make a pie look fabulous 🙂
