Mince pies and Christmas pudding are often left lingering in the days between Christmas and New Year, so why not do something creative with them?

I’ve come up with a couple of ideas that are perfect for feeding guests popping in over the festive season…

Boozy make-ahead dessert that’ll use up those pesky Christmas pudding leftovers in rather a lovely way. I’ve infused the custard with baileys for an extra indulgent layer of flavour. Make them in little glasses to give everyone a manageable portion, and pop a little sparkler in for a touch of magic.

Mince Pie Chocolate Fridge Cake

Fridge cake that uses up leftover mince pies is the best use of mince pies i’ve ever tasted. It might sound a bit weird, but you have to believe me, you will try this recipe and LOVE it!!! It’s a festive combo of mince pies, nuts, orange zest and melted chocolate. It’s also ridiculously quick and easy and doesn’t require any baking, so is the perfect emergency cake recipe should you need one at the last minute!
