Lemon, pesto and turkey gnocchi

Finding uses for leftover Christmas turkey is never going to go out of fashion, and on that note I’ve been challenged to do just that in a family-friendly recipe that costs under £10 by the Lean on Turkey campaign.

When we’ve had a roast turkey or chicken I routinely strip the bird of any leftover meat, wrap it in foil and stick it in the freezer ready to be used in the future for the basis of another meal.

So this time I dug out said packet of shredded turkey and decided to combine it with one of my favourite super speedy weeknight suppers – gnocchi.

I cooked some frozen peas in with the gnocchi, drained and then to bring out the best of the turkey meat I added the zest of a lemon, a generous helping of pesto and a knob of butter to keep things moving. Toss it all together and serve up in bowls with a liberal scattering of freshly grated parmesan. If you want more greenery you could serve it up with some salad leaves.

Bish bash bosh, there’s a very quick, cheap and easy weeknight supper with the help of your Christmas leftovers – result!

Sam came in from his Karate class and wolfed his bowlful down in an instant! I can’t recommend this dish highly enough for ravenous children who are in need of an easy meal they can devour by the forkful.

Lemon and pesto gnocchi with turkey
Serves 4
Prep time: 10 mins
Cooking time: 5 mins
Cost: £1.19 per person

Ingredients
2 x 500g packets fresh gnocchi
2 handfuls frozen peas
1 lemon, zest
4 tbsp pesto
knob of butter
2 handfuls of leftover roasted turkey meat, shredded
freshly grated parmesan

Method
1. Bring a large pan of salted water to the boil, then add the gnocchi and frozen peas and stir. Allow to simmer until the gnocchi rises to the surface.

2. Drain then return to the pan and add the lemon zest, pesto, butter and shredded turkey meat. Toss to thoroughly combine and then serve into bowls with plenty of freshly grated parmesan.

2 x 500g packets fresh gnocchi – 2 for £2.50
2 handfuls frozen peas £0.30
1 lemon, zest £0.30
4 tbsp pesto £0.50
knob of butter £0.15
freshly grated parmesan £1
