Who are Farmer’s Choice?

Farmer’s Choice is a small, friendly butcher business, delivering free-range meat and sustainably caught fish direct to customers through their website.

They have a great approach to sourcing, using only free range farms in the UK for a range of high quality meat taken from animals raised in natural and comfortable conditions. All of these farms adhere to free range farming regulations and practices and are well known and respected for their excellent standard of farming.

    A stir-fry with sliced turkey and lots of lovely healthy veg like peppers, pak choi, mangetout, asparagus and spring onions and flavour added with fresh ginger and garlic is a great meal, the day after a big roast. We have it with either noodles or rice.

    I like either just slices of cold turkey, or turkey rissoles (made with leftover roast turkey, diced onion, generous sprinkle of black pepper and mixed herbs with a little bit of leftover potato and egg to bind – sometimes cover in breadcrumbs), with a nice fresh salad. For added festive interest I scatter warm roast chestnuts in the leaves and a few pinenut, sesame and sunflower seeds along the groove of celery sticks and serve with a spoonful of cranberry sauce and spoonful of sweet pickle. Fingers crossed hoping for some luck now.

    We always have a cold meats tea on Boxing Day using the turkey, ham, sausage meat, pigs in blankets etc cooked on Christmas Day. Served with fresh bread (breadmaker) and lots of pickles and salad.

    I would shred it and mix it with ham and leftover stuffing, then use it to stuff chicken for a nice ballotine.

    I’ll be bookmarking the recipe for Sausage Bacon and Turkey Curry – a great way to use up the leftovers and enjoy a great meal after a boxing day bracing walk!

    Definitely crusty bread rolls baked in the oven, with a lovely dollop of butter and stuffed with lots of lovely Turkey. Delicious and it goes down a storm.

    We always have left over turkey cold, fry up the left over vegetables and potatoes and serve it all with pickles, coleslaw and crusty bread.

    I would make a soup with a turkey stock of course, bits of turkey meat and roasted sweet potato and butternut squash, leaving it quite chunky for a meal at luchtime. Serve it with crusty rolls.

    I would do a similar dish to what Nigel Slater recently did on TV. I would put the Turkey with any other leftovers into a frying pan. It would be similar to a Bubble n Squeak

    IF there is any turkey left, I usually make a Turkey Roulade using left over sprouts, carrots and roast potoatoes. Mmmmm.. yummy, scrummy!

    Boxing Day: I have been inspired by the Farmer’s Choice Christmas Page to eat a free range turkey and mushroom pie served cold with cranberry sauce; a vegetarian quiche made with a selection of vegetables from my choice Winter Stew Veg Pack, which can be prepared a few days in advance and deep chilled: a selection of cheeses with seasonal Pink Lady Apples, and a fresh fruit salad divined from my Exotic Fruit Basket, and last but not least, home made bread made with my bright and shiny new bread maker which I’ve put in my letter to Santa; I’ve also asked him to bring me a chef. Merry Christmas!
