BBC Three Counties radio presenter Nick Coffer of My Daddy Cooks fame invited me onto his fab weekend show Nick Coffer’s Weekend Kitchen to talk about family friendly recipes for Mother’s Day.
I whipped up an easy menu full of cheats and corner-cutting tactics that result in tasty and impressive looking dishes that will give your family and friends the impression you’re a total culinary genius… result!
There’s the Speedy Goats Cheese Tart to start, Sticky Sweet Chilli Chicken and Butternut Bake for main, finishing with the three ingredient make-ahead dessert that is Lemon Posset.
I also shared my favourite recipe for a super quick Chocolate Fudge Cake that is absolutely ideal for Mother’s Day… so perhaps print out the recipe and casually leave it lying around for your partner 😉
