I had an even bigger gaggle of boys to feed today when my friend Tara came over with her two – Rory and Jasper.
It’s always an energetic play date when we put our boys together – but it’s a good chance for us fellow mums of boys to compare stories and find solace in the fact that we’re not alone in our daily battle to keep up with them!
You really can’t have a perfect orderly household when you’ve got mini men running around the house like wild banshees. I accepted this quite a while ago and just have to roll with the fact that my walls are scuffed, my sofa is stained and that no matter how hard I try Sam will never just sit at the kitchen table and work his way diligently through colouring books like a lot of little girls do!
But the sheer physicality of boys is great and rarely dull – as long as you feed them well and wear them out they’re pussy cats!
So today’s feast – pesto crusted salmon with chunky chips. It’s a mega simple recipe that I make an awful lot. I stumbled across it on the Sainsbury’s website but i’ve adapted it a bit.
Pesto Crusted Salmon
serves 4 adults – or 2 adults and 4 children (halving the fillets for kiddiwinks)
4 Salmon fillets
4 tablespoons of Pesto
4 tablespoons of fresh breadcrumbs
Juice of half a lemon
Parmesan cheese
1. Preheat oven to 220’C
2. Line a baking sheet with foil, lightly oil and then place on your salmon fillets
3. Squeeze the lemon juice over each fillet
4. In a small bowl mix together the breadcrumbs and pesto to form a paste
5. Spread an even layer over each fillet
6. Sprinkle a little parmesan cheese over the top of each fillet
7. Bake in the oven for 10-15 mins
8. Serve with salad and chunky chips, or new potatoes and seasonal vegetables – it goes with everything from rice to cous cous!
Chunky chips
I make my chips in a Tefal actifry. My mum bought it me for Christmas a few years ago now and it’s a brilliant kitchen gadget! I love love love chips and this is a healthy way to make them coz you only use one tablespoon full of oil. They’re crisp on the outside and fluffy on the inside, but not greasy at all. It’s a dieter’s dream!
You get some kitchen gadgets, often as gifts, and they only get used a couple of times and then just take up valuable space in cupboards – but the actifry, like my Kitchenaid, juicer and blender are all worked hard in my kitchen.
