  8. For a super fun weekend dinner I love cooking some Fry’s burgers, popping them into burger buns stuffed with shredded lettuce, red onion and sliced gherkin, with a side of sweet potato fries and onion rings!

  18. Our favourite veggie meal is a Mexican Lasagne…made with flour tortillas instead of pasta sheets, with veggie chilli in between. Instead of bechamel sauce, I cover the top in creme fraiche and grated cheese. Yum!

    My fave veggie recipe is a rice loaf. Its boiled rice, cheese, fine chopped mushrooms, egg and marmite mixed together and baked in a loaf tin with a layer of tomatoes on the top and through the middle. Even hard core carnivores love it!
